[HK] Maison Eric Kayser II - Harbour City

Thursday, January 17, 2013

This is the second part of our review of our food test at Maison Eric Kayser, as part of a follow-up to the first write-up.

Notable famous for their confectionery, it would be a sin not to try some of Eric Kayser's signatures.

The classic croissant was available for free tasting when we visited and we decided to try some. Well, we did not leave the bakery with any in the bag, so go figure. The croissant was not as fluffy as the ones tried in Singapore with less pockets of air. Despite it being crisp, it was not as crusty as the first version.

Brioche

This was about the best thing we departed from the bakery. The surface of the brioche was crisp and emitted a fragrant aroma of well-baked pastry. The crystalline sugar pieces on the top of the brioche gave the extra crunch and a slight tinge of sweetness to complement the texture of the soft and fluffy bread on the inside. It was pretty irresistible and it was not long before we realized that we had munched down half the big brioche!

Verdict: 8.0/10

Financier

Personally I found the exterior texture of the financier too burnt for my liking. Also, the exterior crust was too 'rubbery' and thick instead of a crisp sharp crust. The cake itself was too dense and compressed for my liking. The taste and flavour of the financier itself was good, with a strong almond after-taste.

Verdict: 6.5/10

Chocolate croissant

The pastry of the chocolate croissant was very crusty and crumbled with each bite. It tasted crisp but not overly buttery in terms of flavour which suited our palate. To our dismay though was that the chocolate wrapped inside the croissant was not satisfying. The amount of chocolate was unfortunately short of our expectations.

Verdict: 6.5/10

French baguette

The french baguette tasted pretty mediocre if I might be completely honest. It was nowhere close to the standard and quality of the one we tried in Singapore. If you looked intently at the picture, you might notice the poor yeast fermentation, which resulted in patches of the bread with greater density.

When we revisited Eric Kayser for a second time, we noticed that the food tasting was still going on for some of their signature breads, including the croissant.

There was one huge flaw in terms of the presentation of the confectionery. If you noticed from the pictures above, customers were allowed such close proximity to the bread and pastries. It pretty much deterred us when you gave a second thought about hygiene. I even noticed some children fondling with some of the pastries located on the lower shelves!
